A bar with a selection of more than 100 whiskeys is slated to open on the West Side.

One Bourbon in Grand Rapids, at 608 Bridge St. NW, is planning to open in March and feature an “American regional dining” menu with a selection of more than 100 whiskeys and bourbons. The restaurant is operated by CF Group.

The two story, 6,251-square-foot space is the former home of The Rocket Lounge.

The food menu will feature “West Michigan-inspired plates with a Southern flair”: fried chicken, bourbon beef poutine, vegetarian shepherd’s pie and more.

Beer, wine and cocktails will join the extensive whiskey list on the beverage menu.

One Bourbon expects to hire about 15 people.

Colliers West Michigan helped locate the spot on the West Side, and Colliers advisor Mark Ansara helped lease the space.
