GRAND RAPIDS — The proprietor of Fish Lads LLC, located in the Downtown Market, plans to open Carvers, an “artisan” butcher shop, according to a statement.
The shop’s proprietor, Jeff Butzow, said that the growth of Fish Lads led to his decision to open a butcher shop.
“Great butchers operate with three principles in mind: pride, passion and provenance,” Butzow said in a statement. “Our vision with Carvers is to bring the same high-quality, local products to local tables that people have come to expect from Fish Lads and the rest of the Downtown Market.”
Carvers, which is scheduled to open this summer, will operate adjacent to Fish Lads, in a space formerly occupied by Montello Meat Market, which closed in December.
Carvers, aside from selling meat to-go, will offer an on-site kitchen.
“The newest and most successful artisan butchers are going above and beyond for their customers in addition to selling humanely raised meat,” said Mimi Fritz, president and CEO of the Downtown Market, in a statement. “The innovative approach that Jeff has incorporated at Fish Lads, and the passion others are pouring into their own businesses, is undoubtedly the driving force behind the success of the Downtown Market.”
